Traditional New England cooking is probably the closest thing to Native American food and there's about 2 restaurants in the entire world that serve that slop, to tourists. nobody pretends it's good.

Even in the southwestern US where indigenous culture still gets some recognition, you don't see indigenous food (frybread and "Navajo tacos" are post-1860's tradition from the era when the tribes were given wheat flour by the US government).

Before their foodways were disrupted, my understanding is that native food in the region was mostly corn (roasted, or parched and ground for flatbread or porridge) supplemented with stews and roasted/grilled preparations that consisted of squash, beans, chiles, meat from domesticated turkeys or hunted deer and other game (plus domesticated sheep after the arrival of the Spanish), and foraged plants. Salt was an imported good in most of the southwest, so it's a fair bet that most of their food was bland by our standards.

Now that makes for a healthy diet - but in a culture where the expectation of restaurant food is that it will contain lots of salt, fat, meat, and spices, and often sugar too, that kind of native food is simply not attractive enough to be commercially viable. That's why, at least in the southwest, you don't see indigenous food for sale.

Their food objectively sucked. I've had as authentic as you can get California indian food, and it sucks ass. I'll give them credit for figuring out how to eat the acorns of oak trees, but once you get the evil out of them they don't taste like much. Steamed shellfish is fine but gets old, and much of the shellfish was traded with inland indians for shiny things.

For the rest of the country, hoecakes etc. are okay, I guess. The beaner Indians down south had it much better. TL;DR: American Indian food ranges from boring to sucks.

Here in Victoria, BC there's a First Nations food truck. I haven't been to it yet, but I bet they're selling bannock and salmon, both of which is delicious.
