It's rainy here, so I'm going to take our pot roast leftovers from last night and make what my southern grandmother called "hash" (although it's not). It's basically making a thick beef stew with the leftover meat and vegetables, seasoning it, and putting it in a baking dish and topping it with homemade buttermilk biscuits and baking it till golden brown. It's going to bring the feels....she was a sweet old lady who made that every time she visited us when I was a kid.

There are still leftovers but tonight I'm doing ahi tuna steaks over mixed baby greens with lime-cilantro dressing and avocado. Usually I do this salad with baby arugula, but I was just at the store and all of their arugula looked like garbage.

The recipe is pretty basic. You're using leftovers from pot roast, so you have to make that first. I make mine by filling the bottom of my roaster with halved small red potatoes, baby carrots, quartered onions, and whole heads of garlic that have top cut off. Then I add about a quart of beef stock (or sometimes stock and wine) and a bay leaf. Then, I sear the roast over high heat, and place that on top of the vegetables. Sprinkle some seasonings of your choice over all (I usually use Herbs de Provence and black pepper) and put the lid on. Start the roast in a 450F oven for 20 minutes, then turn the temperature down to 325 and roast several hours (depending on the weight of your roast). Serve with crusty bread and red wine.
So, that's one meal.
When you put away your leftovers, keep the juices in a separate container, so you can use it to make a gravy the next day.
For the "hash" (as grandmother called it), you just cut up all the leftover vegetables into bite sized pieces, and then either cut or shred the roast into pieces. You may want to saute some more onions (preferably in bacon fat or beef drippings) in your stock pot, for extra flavor. Anyway, then you make a gravy of sauce consistency with the leftover beef juices, and combine that, along with the cut up leftover vegetables and meat in your stock pot and cook over medium-low heat until heated through. Meanwhile, make a buttermilk biscuit dough (you can either roll it out and cut to make round biscuits, or you can just make drop biscuits. You can also add seasonings like garlic and parsley or parmesan cheese to the dough if you want to add extra flavor). Then, you just spoon the thick stew into a baking dish (not too deep, you want the stew to get hot in time with the biscuits baking) and either place your cut biscuits on top, or drop biscuit dough by the spoonful evenly across the top. Brush the top with a little melted butter and bake until the top is golden brown, and then enjoy!
