Flat surface. Any will do. Sometimes I use the middle of the hot pan to crack them and just lift and split. It's the quickest.

This. If you break an egg against an edge, there's a good chance there'll be small shell pieces that could fall together with the egg. If you smash it against a flat surface, it only makes one long crack around the egg (if you do it right, it could take a while)

You want to avoid anything with a 'pointed' surface as it can push shards of the shell into the egg with alarming frequency, which is bad news bears unless you intend to crack it into a bowl and scour it for said shards. Or unless you want to eat egg shards.

You are probably using proper force. So there's no complication.
Using a flat surface breaks the egg so it can be split along a crack.
Using an edge pierces the shell so that it is divided and in my opinion requires more precise control.
The only benefit to using a flat surface is going fast and not needing to be as careful. I break the egg where it'll be cooked. You can use more force and less care.
The egg pieces, well I find the quality of the egg to be more relevant.

Just tried using a flat surface and holy shit you need to smash so hard compared to the side of the pan! Of course goo leaked out as well so I had to wipe the counter.
