There are lots of businesses that are closed on Sundays, or have reduced hours.

Wednesday is in the middle of the week. With the exception of Oreos, everybody ignores the middle. The middle child, the middle of sentences, the middle of essays, the middle of contracts, middle names, etc. A bread baked on a Wednesday could just as easily have a Tuesday or Thursday clip/tie and not lose too much accuracy.

You could argue it isn't sealed as tightly and will go stale, or that spinning it squishes the bread by creating tension on the sides. I personally twist then tie.

Bake your bread. Fresh Sourdough costs me 17 cents a loaf, and takes maybe 10 minutes a week of effort. It's the patrician thing to do.
