There are lots of businesses that are closed on Sundays, or have reduced hours.

Wednesday is in the middle of the week. With the exception of Oreos, everybody ignores the middle. The middle child, the middle of sentences, the middle of essays, the middle of contracts, middle names, etc. A bread baked on a Wednesday could just as easily have a Tuesday or Thursday clip/tie and not lose too much accuracy.
