I went to a place the other day that makes a burger topped with onions caramelized for 9 hours
Is there any reason to believe this would produce a better product than say, 1 hour onions? I didn't notice a discernable difference. Sounds like a pain in the ass
i'm sure they just used a slow cooker

How does one properly caramelize onions without a crockpot? How much time does it take? I have an induction cooktop that can keep stuff at 60°C indefinitely, is that hot enough?
Wouldn't onions cooked for 9 hours basically be liquid at that point?
