deglazed the iron pan with a cup of chicken stock, then added it to the larger pan with the beef and additional stock to almost cover the meat

brought to a boil, reduced to a simmer and now cleaning and prepping veggies for a salad

I thinly sliced some red onion, quartered some very tasty hydroponic tomatoes, and made a honey-Dijon vinaigrette

The goulash is happily simmering and I'm having a very nice beer

been simmering for about 90 minutes now. the sauce is starting to tighten up and the beef is beginning to become tender and tasty.

I think another 45 minutes should just about do the trick. I'll be serving the goulash over buttered noodles with salad on the side.
