Anyone here into pickling? I recently got into chutneys, pickled mashes, etc. I've done:
Dill pickles (string beans, cucumber, chiles)
Mango (standard Indian)
Eggs
Cabbage (sauerkraut)
Any good pickling recipes or experiments I should try?
For my dill pickles, I throw in a sprig of rosemary and a chopped thai chili. The brine goes well with gin.

I make kimchi often. It adds a nice heat and flavour to most foods.

That's more fermenting than pickling. Same with sauerkraut.
how do I into dill pickles?
there's a little packet of pickling stuff at the supermarket. is that worth a shot?

I'm not sure why you consider them to be two different things.
Ferments are pickles. They're just "self made" pickles where the acid comes from the fermentation rather than from added vinegar.

Put cucumbers and some fresh dill in a jar. Add some pickling spice blend. Pour in vinegar. Put jar in fridge for a while.

I pickle cucumbers, red onion, and jalapeƱos in the same jar.
I tried pickling once and then it grew mold and I was freaked out...
I'll never attempt to ferment habanero again. Pain in the ass that isn't worth the effort; comes out rancid. Quick pickle at best.
Everything else turned out splendid.
