So I've started a nice herb garden with dill, sage, rosemary, basil, oregano, parsley, chives, and mint. Some of it will be used in cooking, but I was curious if I could make a salad out of them. Or at least add them to a salad.

you can grow cucumbers if you have room and use the dill in cucumber salad.
basil is good in salads as an accent, as is mint.
chives are basically mild green onions so they'd probably work in a salad as well
do yourself a favor and don't mix them all into a salad unless you like torturing yourself
Is there an herb garden infographic or a recommended book, wiki, etc? I started an herb garden a few months back, but my basil and cilantro both died fairly quickly. I don't know if it's due to too much/too little water/sunlight, or maybe some other factor

Stupid question, but how and where on the plant do I snip my herbs, and how frequently should I be doing it?

If it's leaves, snip at the base where the leaf meets the stem. If you need a whole stem of something, cut it at a "node" (like pic related), that way the plant will have an easier time healing/regrowing.

As for how frequently to "harvest," it's a good idea to leave at least 1/3 - 1/4 of the green/leaf matter.
It's not super important how you cut from each stem, but try to cut from only one stem at a time if only using a few leaves (or remove entire "branches" altogether): this will make it easier for the plant to heal.
Also, don't over-water: the soil should be allowed to dry out from time to time, as constantly "soaked" soil can lead to root-rot. (This is all general horticulture stuff, not specific to herbs)

Is that your picture OP?
Each of those should be in a pot that size all to their own. As it is they'll either all be dead in 2 weeks or that mint will take over.
There's too many competing plants for any one of them to grow large enough to be used on the regular. I have my rosemary plant growing in a pot that's about that size and even then it's not really big enough. I plan to move it to a really big pot or just go for gold and put it in the ground once it gets bigger.
tl;dr pinterest-tier herb gardens are a meme and don't actually produce enough herbs for consistent use
