Bacon wrapped streak bites
Makes 25
Half a kilo of rump or similar
25 slices bacon of choice
Thyme, oregano, marjoram, rosemary (fresh for fucks sake)
Sous vide your steak to rare with the herbs. Bout an hour at 50-60c
Salt and sear off the meat (griddle or grill works best) as quickly as possible
Rest for 10-15 mins before dicing into portions. I usually go for 20+ grams per 'bite'
Halve the straps of bacon and wrap tightly around your bites, and insert a cocktail stick. Further herbs can be added to the inside of the bacon
Place in oven for 8-12 mins at 200 depending on degree of crisp desired
Works well with a bacon jam, bearnaise, or mushroom demi
Pairs great with a speyside or older bourbon
