i bought a plantain because i want to make chips should i fry

i bought a plantain because i want to make chips

should i fry it twice like a potato?

any other considerations?

shallow fry them, you don't need to go crazy with oil though.

make sure it's hot enough that the oil bubbles around them. also not too hot or they'll burn easily, especially if they're blackened plantains with higher sugar content.

no need to double fry them. just pay a lot of attention and try and check regularly, flip when necessary

If they are ripe (yellow/black) you can cut them in slices about a quarter inch, then fry the fucks. you can alternatively peel them and put them in an oven for about 40 minutes at 350°. Don't eat them raw, they taste like shit raw.

If it's green, cut into thick disks, fry lightly, pound flat, then fry again. If it's ripe, then just cut into slices and fry once.
