When I had it in Korea at a Kalbi house, the short ribs were different than what you generally get in the US. They had the whole short rib but butterflied the meat into thin sheets on each side of the bone instead of the thin crosscut style with small pieces of the bone in the meat you typically get here in the states. Whenever I make it at home, I always butterfly the whole short rib. Better presentation and you can usually find better quality meat when it's the entire bone.

That's right. That's exactly how it should look. Kind of hard to explain but it's not that hard to do. You're cutting at the base and unrolling it as you go without cutting completely through. I don't know if there's a youtube video of it, but I saw one where Rick Bayless did it with a pork loin.
