Has anyone tried using baked chicken with this?

Baked, no. There's probably better stuff to use baked chicken for. Like quesadillas or something.

When I have left over chicken from a rotisserie, I pull them into thinner strands and put them into the soup. Pretty good absorption and they usually get tangled in with the noodles as you eat them.

Also put in a raw egg while cooking and stir it around a bit (not too much) to get something like egg drop soup. And if I have it on hand, I usually put some fresh scallions. A little bit of sambal oelek if I find I put too much chicken in.

Yeah, I eat it every couple of weeks. Cheap, but I find it pretty tasty.
