It probably would have saved my sister from maiming her hand when she tried to cut a block of parmesan with a non-serrated chef's knife.

It's important and done in all schools in developed countries. Japanese elementary schools teach kids how to descale, skin, fillet their own fish and make miso soup and basic meals from scratch from 5th and 6th grade.
4th grade they show they how to hang a dead octopus to be dried for jerky.

Certainly! It builds hand-eye coordination, concentration, and healthy eating habits. Kids are more likely to eat things they helped make without bitching. You'd be surprised what kids can do-- a five-year-old I babysat could pour muffin batter just as cleanly as I can.

Just don't give them the sharp knives before they have fine-tuned coordination. Eleven to be safe. That being said, my mom gave me adult kitchen scissors to use on veg when I was five and sharp knives when I was eight. She figured that if I could control my pencils for art class, I'd be fine.

When I see the amount of wasted vegetable growing area in the US suburbia it makes me sick. You can't even imagine the amount of food that can be grown and preserved from 1/8 acre. And most suburban plots are 1/4 acre.

Curing meats and cannnig are skills that everyone of us should be implementing. Why don't we? The only reason I can think of is a lazy self-complacent gluttony.

Absolute necessity.
Even basic things, a simple base pasta sauce, how to make basic porridge, carrot soup. Even beyond that, just a basic understanding of how to prepare things, like how long to boil certain vegetables, or how to measure out rice. I learned my shit largely through poor-college-student level experimentation and some internet sought recipes but my parents did teach me enough of the basics that I was able to not cause any fires, slice off any fingers nor burn half of my face off. Which is almost as important as cooking something that tastes acceptable.
