Corn is very seasonal. You can only get whole ears of corn in the store/farmer's market in the summer and early fall. Canned goods are just shelf-stable like >>8459855 said so you can buy a lot at once and just have it on hand if you don't want to shuck a ton of corn or make tomato soup from scratch because you only have 30 minutes for lunch
