The OP pic is a batch of kefir. You need "kefir grains" (clumps of yeast and bacteria held together with protein) to ferment the milk, and it turns into a tasty pourable yogurt-y drink in about 24 hours
If you're feeling brave, you can leave milk uncovered in various places around your house and keep/combine the milk that sours pleasantly, adding some of the final product to more fresh milk to repeat the process

Kefir and maslanka are great for hangovers. They also go great with some boiled potatoes dressed with fried pork belly and onions plus fried eggs. Poor man's food but great food.
