Anyway, pork should be slow cooked to dry it out. Dry meat is awesome. Serve with a hard yellow cheese

"Buying a pig in a poke" is making a purchase without seeing the product and getting scammed.
I've also head it used as a name for a sausage baked into a bread and for ground pork and rice in a cabbage roll. The last one may have only have been used by my grandmother, but she was insane anyway.

To get a good poof when you fry them, the belly skin needs to sit out for about 50 hours. It's beneficial because it looks like more food than it is when you plate it, but annoying because it takes so long.

Basically if pork belly is on your menu, there is little reason not to also serve pork rinds as an app.
