If I burn my mirepoix, do I need to start over or is it still

If I burn my mirepoix, do I need to start over or is it still good to use? This is my first time making stock btw (beef stock, I was roasting the bones and I left the veggies in the oven too long)

If it's literally burnt then yeah, you need to start over.

if your onions (and especially garlic) have burnt it will be noticeable in your final product

for a dark beef stock you might get away with it if the onion is only a little burnt; but if it's for something like a risotto then forget it

Normally I'd take your advice but I'm snowed in at the moment and I used up the last of my veggies, I've only got 2 sad little celery ribs left. What happened was the bottoms of the carrots and the big pieces of onions got burnt but the tops are ok, and a few pieces of the smaller onions got completely burnt. My original plan was to make french onion soup later this week, you think it would be better to hold off until I can get more vegetables?

there is no way you are going to be able to pick out the burnt parts unless you are making an enormous batch and can just toss what was on the bottom

I just tip the pot sideways, the worst of the burnt stuff will be stuck

french onion soup a bit like risotto, the burnt flavour will show

I figure the bones will only be good for stock, so go ahead and make the stock
it might turn out OK
but if it's noticibly burnt maybe try using it for something heavier, like a stew or maybe just reserve it for de-glazing meat

if it makes you feel any better I once burnt spagetti

I used a really hot pot which I had been using for something else, and it burnt the spagetti before it got to the water
