It's great melted on top of beef, like in a burger or on a steak.
It also makes fantastic mac-and-cheese. It melts so well that you don't even need to fuck around with making bechamel either. Just cheese and a little cream. Super simple, super tasty.

I DETEST blue cheese but there is one use of it that I really liked.
In Falls Creek, Australia, there is a ski resort. At the back end of this ski resort, a long way from the ski village, there is a cafe.
At this cafe, they serve a burger that I try and eat at least once or twice every time I go skiing there.
"Kangaroo burger"
It's not a minced-meat burger, it's a fucking steak sandwich in a bun.
Ingredients, roughly in order:
Bun - heel
tomato
slice of chedder cheese
kangaroo steak
thin slice of blue cheese
lettuce
bun - crown
When it's served, the steak is still really hot and the blue cheese just melts into it.
Somehow, even though I hate blue cheese and the smell of it, melted over kangaroo steak is just perfect.
