I've been tasting soy sauces on its own, and in general Japanese Shoyu > Taiwanese soysauce > Chinese soy sauce > Hongkong soysauce.

The processes varies slightly which changes the taste. But thats just my personal preference.

Well my family is asian and nearly everything we eat is salty so it's probably fine for me, not sure if white people can cope with a high sodium diet.

Hong Cong is China since 1999 + 1. But I always keep regular and low sodium soy sauce on hand depending on the dish. One isn't better than the other.
