It depends on what type of cuisine you're cooking. I usually put lemon in when I want acidity but not too much flavor. Limes I put in curries and such when I want the specific lime-y taste.

I also prefer lime water to lemon water. It's just tastier.

Limes aka hipster lemons really only got big a couple of years back. I tried them once and they were underwhelming, but that doesn't stop the nu-male hipsters from going crazy over them, of course. Because dirty mexican fruits are more "cultured"

Lemons are better if you need more acidity, limes are better if you need a little more of a fruity flavor.

I was in 'nam for a month and I did not see a single lemon, only limes.
I asked my father about it and he said they taste the same, so waiting for limes to ripen is stupid. Is he right?
