Traditionally, it was made in late fall during hog slaughtering, smoked and cured through the winter and consumed by the men in the summer for a snack or quick lunch while they were working the farm. Hence, "summer" sausage.

I make my own using venison and pork shoulder, but the mass produced stuff you buy from stores is just chemically brined garbage.

Wew, lad. Summer sausage is a semi-dry fermented sausage more akin to Thuringer or Gothaer if you want to compare it to a European sausage. Salami, of which there are a number of varieties, are a dry fermented sausage.
