The wifey and I are making Fondue tonight for New Years. We had a trial run yesterday and it turned out great, for a while. After a while, it went kinda fucky. The flavor was fine, but the texture turned a little mealy. Any suggestions as to what went wrong or protips about Fonndue in general would be greatly appreciated!

sounds like either a temperature issue, or it just sat on the heat too long. actual, non-plastic cheese will get weird and curdly after being heated for a long time.

that is my best guess. I am not a fondue expert, just a fatfu/ck/ who cooks with cheese sometimes.

Actual fondue is really fucking bitter/alcoholic for at least 15 minutes in, so maybe something is up with the wine.
