Surface area. Shredded cheese melts and cooks faster (depending on the cheese) putting it more in line with the time it takes to cook the pizza dough (11-13 minutes at 500).

Sliced cheese has it's purpose assuming you're cooking at a lower temp for a longer duration, which is delicious and tastes fine if that's what you like.
