any idea why my hot and sour soup goes cloudy when I add the vinegar?

it never does usually, and I can't think why it would

no clue bro srry

this goes in the oven for an amount of time
>>

Fat emulsion. Speeds up when you add vinegar.

You can try skimming more fat out of the stock or put less in there in the first place I guess.

ok to be honest the flavor was really good, but i dont think i like oxtail its way too fatty and annoying, made the whole dish have a super greasy feel, plus i kept thinking about eating a tail

ill give the leftovers to a few people at work who eat anything
>>
>>8413716
There's a reason why oxtail used to be a cheap cut of meat until hipsters recently "discovered" it and made it trendy and expensive.
>>
>>8413716
I might just be retarded but I though oxtail and other meme cuts like that were just for making the stock, not actual eating.
>>
>>8413723
That really irritates me. Gentrification or whatever you want to call it. People rediscovering things that already exist and selling them for a ridiculously inflated price. That cereal shop in London is an example that springs to mind. Himalayan salt too. Just like fondue sets in the 80's. Just eat the damn food without shoving "artisan bespoke" into it and serving it on a square plate or wooden platter.

I know I shouldn't let it bother me but it does. This modern world irks me with its food obsession.

>>
>>8413682

Cleanliness is the most basic part of cooking. You don't work with dirty anything. Ever get the shits just randomly? That's because some fucking savage couldn't into sanitation. You don't wipe your ass and handle food without washing your hands. You don't prep food without washing all surfaces and utensils. You don't serve food without cleaning the dishes. These are the rules. It's not being a killjoy. It's wanting to avoid being poisoned by filthy fucking mongoloids who let their fucking cats lounge on the fucking counter. He might as well have just dropped a deuce up there.

> but I wuv my wittle kittens

>>
>>8413716
Whenever I make it, I let it sit in the refrigerator overnight, take the layer of congealed fat off the top the next day, and eat it without all the grease. Much better that way.
>>
>>8413815

Why not just skim the fat off with a spoon or a ladle while it cooks? No need to wait overnight.

>>
>>8413847

Your cat is covered in shit. They all are. Ever heard a cat get in the litter box and just dig the fuck around in there for ten minutes? Unless you just refilled it with fresh litter, that cat is literally playing in his own shit. And then he's going to spend 25% of his time grooming himself. That's six hours a day. How does he start this process? By licking his own asshole. His shit-covered asshole. And then he licks his entire body afterwards. Your cat is a filthy, shit-covered fucking creature and you shouldn't be allowing it anywhere near where you prepare food.

This is why I never eat things people make at home unless I personally have been to their home and know that they're not filthy fucking retards.

Christ, the people who think their animal is clean...

Dogs:

> literally eat other animals' shit. habitually

Cats:

> 'clean' themselves by licking their assholes first. will spend a good chunk of the day digging in their own feces

Birds:

> covered in salmonella. dust everything in sight with their feathers and dander

No animals in the cooking area. Ever.

You're not answering my question, anon.

I agree with you that animals are unclean and don't belong in the cooking area.

I'm asking why you're accusing >>8413882 of being a Muslim when his post is very much the antithesis of what a Muslim might say. It's like you have things backwards or something.

Ever have Muslim neighbors or actually know a Muslim? They literally believe that dogs are unclean animals (though not pig disgusting) while cats are seen as clean. I lived and worked in Singapore for two and a half years and the only pet that Muslim households had were cats.

This might be /pol/ tier but it's how much Muslims dislike dogs:

Half-lidded eyes or slow blinking in cats means they trust whoever is near them not to gut them while their eyes are closed.
>>
>>8416259
It was a joke, and slow blinking means more or less "I'm not a threat bud". Got countless street cats to like me just by using it myself.
>>
>>8413769

If you'd seen any of OP's other threads you'd know that the cat is never actually "on the counter". She is always seated on something, be it a pizza box or a textbook.

Go masturbate in the corner.

>>8416263
Same, actually, there are a couple dozen street cats around my block and at least they don't just bail when they see me. Some of them, I wish I could feed, but there are raccoons around and it just wouldn't work.

Toasting in epic Patti bread

B-but what are wobbly boots, if my ignorance might be pardoned for this one time?

Also, pic related is some fine Christmas cooking me parents made :3
Holiday visits are so worth it sometimes

We call it Drob here, it's basically all kinds of lamb meat spices and such with veggies and a bit of sauce, wrapped in some intestine or w/e, and in the oven it goes
>so soft
>>

>>
>>
was very nice, good mouth feel
>>
>>8416545
That's a damn good excuse, blaming them boots

The Drob thing is a traditional Romanian dish. The crust-looking thing is called a Prapure, and it's some membrane that keeps the lambs guts together. It's great for the dish because it keeps the juices inside while cooking, so that it doesn't go dry

Best breakfast ever, next to some tomatoes and white (salty) cheese

Got some turkey breast scraps, Yukon mashed potatoes, some gravy I made, and some puffy cloud like bread that I'm gonna make an open faced sandwich with after I get too drunk to type.
Gonna be dank.
Sorry for no pics.

Got some cranberry sauce that I made for thanksgiving that was shoved in the back of my fridge. There's no mold on it, and it's mostly just fresh cranberries and a bit of sugar, so I'm going to put some of that on it too. The pH is insane to deter mold growth for that long, but my fridge is pretty fucking cold.

Time to eat

Overall it was simpler then I expected, dunno why I didn't do this forever ago. I've cooked things that are way more complicated but the roux for this always scared me.

Taste wise it was okay. The mild cheddar I got on sale was practically flavourless, would have been much better with old/sharp. The mild cheddar+the creaminess of the goat cheese made the cheese sauce pretty mild overall.

Will definitely cook again with some onions and bacon or something.
>>
>>8429283

I'm in Canada so maybe it's just unique to us? It's at every Beer Store and LCBO here (Liqour Control Board of Ontario).

Honestly it's pretty great, best bang for your buck I've found without going into the undrinkable range. A six pack of those tall boys will get me nice and drunk for a night.

I can't go back to regular PBR now, these seem a lot more flavorful which means the original taste like water to me. So 10/10 would recommend as a go to

hi OP, good thread as always

i've always hated brussel sprouts. your threads have made me want to try them again. i bought some a week ago but they went bad i think.

anyway, i bought some more. yours look great - exactly what do you do? toss in olive oil with s&p? just split in halves and sear the flat side and then toss around?

appreciate it OP

>just split in halves and sear the flat side and then toss around?
p much just this m8, i clean em up, halve em, get pan hot and toss em up with some olive oil and salt, face em down till seared then toss em around a while, add pepper or something towards the end and maybe taste one to make sure salts right. can fry em up with some chopped bacon or pancetta and cut back on the oil and salt to kick it up, anons suggest roasting them which i want to try also but my method is pretty easy for me to do while cooking other shit

so trying pickled peppers again, this time with pickle crisper so they dont turn to mush

plucked the stems off these, rinsed em and about to get all stabby in here wish me luck

I haven't had these in years, which I remember hating. I was frying some bacon and decided to finally test these after it was done.

I liked it a lot, sort of reminded me of broccoli. I don't think I cooked it long enough for my preference (crispy), but it was soft all the way through. The individual leaves got crispy and tasted really good on their own. I am not going to use as much bacon grease next time.

No shit. You can't even get half a pound of wings for $1 though so you end up ahead.

>>8413344
There's probably more than a few cat hairs in any given dish you make senpai. I love kitties, but I don't understand how anyone but slobs and children find this appetizing.
>>
>>8449965

thats just the box of litter, the actual litter box is in the bathroom.

My apartment has literally no closets beside my bedrooms so I just have to keep shit where I can

Slow cooker guy here. You may remember me from such dishes as beef stew, chicken stew, and chili. I know these recipes aren't exactly rocket science, but I like to eat comfort food to make up for the bitter disappointment that is my life. Also it's cold and raining. So I'm making chicken soup.

Mirepoix, kind of.

god damn, i didn't realize it was this bad.
>>
>>8454346

You think that's bad, take a look around your friends and family and see how many of them bother to wash their hands before they eat.
>>
>>8454349
>not strengthening your immune system via exposure to outside sources
i get a sore throat like once a year and thats it.
I dont use soap on my hands pretty much ever besides showering, just a quick rinse in water.
>>
>>8454346
Yeah, try working in a restaurant kitchen and see exactly what exists. Your biweekly diarrhea? It wasn't caused by home cooking.
>>
WARNING FRIENDS
DO NOT TRY TO USE CAULIFLOWER RICE WITH MA PO TOFU
IT IS NOT A WORTHY REPLACEMENT IN THIS CASE
>>
>>8454569
I had to look up cauliflower rice. Yeah, I can see how that would make for a weird texture. I'd imagine it doesn't soak up the sauce as much as it needs to either.
>>
>>8454611
cauliflower rice is usually pretty decent but man, it sure didnt work out.
i also burnt the doubanjian so the mapo was worse than usual but still

its obiously not as delicious as normal rice (which I love and could eat plain regularly) but cauliflower rice is really low calorie for equivalent amounts.
some chicken thigh, random veggies and cauliflower rice in a stirfry is filling and fits into my calories for the day

>>
>>8454372
Me too. I do wash my hands with soap, but never antibacterial. My cats get up on the counter all the time. I don't get flu shots. I don't use hand sanitizer. And I get sick maybe once every two years. I was pretty proud of myself for going a whole 8 years without puking. (Sadly the streak was broken by a random stomach flu a couple years ago, but since then I'm puke-free!)

Excessive cleanliness is not good for you. You can't build up an immunity to anything if you're constantly bathing everything in Lysol.
