anyone have experience working with gellan gum? I want to make a drink with suspended bits like that orbitz drink from the 90's, I checked their wikipedia and it used gellan. Does it dissolve immediately, or is there some sort of priming period? any advice about gellan is appreciated

i've made little spheres of scotch. i used agar agar. you need to cool the outside quickly to get the spheres to hold shape - you drop them in cold oil.
i served them in ginger ale. it was not worth the trouble.

sorry the gellan is mixed into the liquid to create that interesting consistency that allows the gel dots to suspend evenly, I want to know if I could make one of those instant drink mixes that has it and expect it to dissolve/activate in reasonable time

I haven't used Gellan for that purpose myself, but there's plenty of information about using gellan in Modernist Cuisine. I'm sure that would have the information you're looking for.
As for it dissolving: it dissolves readily. Depending on what consistency you're going for it may take time to "set", just like gelatin or agar-agar. Given that orbitz was a liquid beverage and not a solid gel I don't think there was much time involved; it's probably just a matter using the correct type of gellan & getting the concentration correct.

Back in the 90s when my friend first got his car we tried these out. I made him laugh with a mouthful of it and he spit the little orbs all over his dashboard. Some went into the vents which we could never recover.
