St. Louis slab with simple dry rub of salt, paprika, brown sugar, and chipotle chile powder rested overnight and smoked at 220F for 5-6 hours. After 3 hours kill smoke and baste every 30 minutes with mustard, apple juice and apple cider vinegar. Simplistic perfection.
