2. Let it get cold so the fat congeals and can simply be lifted out in bits and pieces.

You either pour our the excess fat at the beginning or add enough starch to incorporate it. That's gravy making 101.
let it rest at least 15 - 20 minutes to de-emulsify, then pop it in the fridge or freezer until the fat layer is solid. Its much easier to spoon it off when the fat is solid white and visible.
