While I was in London people kept boasting about how great these are, and on a whim I bought some.
What do I do with them? How do I serve/prepare them?

Take a whole grain bagel (whole grain because they're good for you, and taste better, Amerifats) and spread some cream cheese on it. Place a slice of red onion and a slice of tomato on top of the cream cheese. Take one of the herring filets and slice it into two or three pieces, depending on the size, and place it over the veg, and close the top half of the bagel over the stacked ingredients.
Congrats, you now have a quick, easy, delicious and nutritious breakfast or lunch. Eat and enjoy.
