I make this guy's gumbo several times a year. It's amazing.

I tried making "gumbo" a few weeks ago with no okra because i can't get it around here, no seafood because there is only the shitty frozen kind here, and some local style sausages. It was ok but the sausage flavor ended up overpowering everything else, does andouille has some sort of mild flavoring?
