How does /ck/ feel about jerky of any kind, I like to eat slim jima although I assume they are not quality like almost everything else I end up eating regularly

How do I make jerky such that it is tender, yet low enough moisture content to be shelf stable?
Slim Jim impresses the shit out of me. Apparently they pressure wash bones until any clinging meat is blasted off. It collects in a bin underneath, and that is seasoned and pressed into tubes before cooking. Surprisingly palatable despite its origins.

The other meat sticks I've shoved deep down my throat just don't have the snap when you bite them that a Slim Jim has. It really makes all the difference. Also the tabasco kind is GOAT.
If beef weren't stupidly expensive still I'd make beef jerky every week. A1 is my favorite, but heavy pepper is regularly nice. Teryiaki is good, but its tough finding a good sauce.
Salmon candy is also a thing, its sugary and smoked and well preserved.
