Suggest a vegetable for my marinara sauce. So far I am using shredded carrot, tomatoes obviously, and a lot of minced garlic. I will be cooking it with stewing pork and it will be served over rice because I don't like pasta. I'm thinking about using zucchini. Anyone else have an idea?

Also Aubergine would really go well.
Chopped leafy greens. Spinach, kale, etc. Bok choy has too much water imo, unless you have time to let it simmer down.

When I make marinara I toss cored halved tomatoes, onions and garlic with olive oil, salt and pepper, fresh rosemary and thyme, and basil l if I have any, but I usually don't. I roast it, blend it, then stew it with some red wine. Wala.
Alright, got it figured out. I'm going to make marinara sauce with shredded carrots, kale, mushrooms, lots of minced garlic, and dried hot pepper flakes.
