I haven't been able to find anything challenging. There's no depth to cooking.
it only seems hard to make cause when it does fail it fails catastrophically. i made all kinds of emulsified sauces for like 2 years without a single failure, then when i finally did split a hollandaise or something it was the worst thing in the world, but it's not actually hard to do, just either requires patiently attending a double boiler or being good at heat control over the stove.
I find that it can help to have someone else pour in the butter while you're whisking. Same with the oil in mayonnaise.
Can't you just throw more RPMs at it?
