The soup kiosk in my uni food court has been making excellent Broccoli Cheddar soup. In the winter this shit is too good.
Chowders, hearty Borsht, Butternut Squash, consommé are usually what I like.
I like beef stew in particular when it's cold out. I made pasta fagiole recently and that was nice too. I'll try minestrone next time

Love that stuff. I make both versions with one with shrimp and the other chicken. Super easy to make and wonderful flavor blend from the lime, lemon grass, and fish sauce. I always put extra thai peppers in because I like it fiery. I also use homemade shrimp stock for the shrimp version and chicken stock for the chicken one.
