What is the best kind of apple and why is it granny smith?

I've never cooked with apples, so I'm not sure which is best in that capacity.. but the big three ubiquitous american apples (Granny Smith, Red and Golden Delicious) are all godawful eaten raw.

Gala > Fuji > Pink Lady > the rest

I used to eat cooking apples raw, love that crazy sharp flavour. Gives me an idea actually, how about Fuji apple flan with translucent-thin layer of raw cooking apple over the top? Throw some creme pat on top and could be pretty good.
