Dried goods never have the potency or body of their fresh counter parts, thus are inferior (unless the drying process is necessary to make said food stuff palatable). Reconstituted dried fruits, meats, veggies, and starches usually end up with a vastly different texture.
Not to say dried goods are poor, or unnecessary, but that their fresh counterparts, where available, are usually preferred.
This argument does not take into account the clear superiority of dried good's excellent, near infinite shelf life versus that of fresh product.
