IVE NEVER HAD GOOSE OR DUCK BUT I HAVE HAD OSTRITCH. IT IS MARKEDLY DIFFERENT TO CHICKEN IN FLAVOR AND TEXTURE. IT WOULD STAND TO REASON OTHER BIRD EGGS WOULD FOLLOW SUIT.

Goose eggs are awesome for baking with. One goose egg is equal to about 3 chicken eggs, and their whites are usually denser as well. Duck eggs are great poached (and all sorts of other ways).
Anyway, it's worth it if you have the space for them. Geese are also great guard birds, they're very territorial and will chase people off your property.

My parents raise their own chickens, but the cost outweighs the benefits. The upside is that my mom treats them like pets and makes sure their feed is outstanding, which results in some high-quality eggs

I've had duck eggs, they have bigger yolks so the are really tasty but I guess unhealthier.

I buy duck eggs at my farmers market for $3.50 / dozen. I think they have a richer flavor and of course are larger, so whereas I might eat 2 chicken eggs I'll have 1 duck egg. The shell is much harder to crack, though. I eat them fried, boiled, and as omelettes. I don't normally bake with them.

The farmer told me the reason people allergic to chicken eggs can eat duck eggs is because they're alkaline instead of acidic. I haven't bothered looking that up though since it's irrelevant to me.

I used to get duck eggs from a farmer's market. Much better than usual eggs, but I suspect that has more to do with the freshness.

When I was a kid, my dad would take me to this island, where I'd hang out by myself for hours. I would take my shirt off, cover myself in mud, and chase geese out of their nests and steal their eggs. They were pretty good. I boiled them, or ate the yolks raw.
