It's an excellent sausage, but it's a bitch to make. You have to emulsify the lean and part of the fat, and then mix in cubed fat. The emulsification can be tricky because the temperature has to remain very cold to prevent the fat from "breaking."
Although it bares a cursory resemblance to american bologna in that they're both emulsified, the Mortadella is a far superior product in both flavor and texture.
I heartily suggest that any amerifat who has not tried it pick up a locally made or imported chunk to try. You won't regret it.
