Is cast iron the most patrician cookware?
I find I only really use it for breakfast foods and searing steaks

carbon steel is more practical with all the important benefits of cast iron. There's a reason professional kitchens go carbon steel over cast iron

Pro kitchens have powerful burners (hobs) that make your only listed "con" not so important.
OTOH, at home that "con" is critically important. When you have a crappy residential stove and you need to get a good sear or on something or try to get a halfway decent stir-fry, then you need something that is thick to retain as much heat as possible. I don't mind using carbon steel at work, but on my home stove? No thanks, I need the extra thermal mass of the CI.

It's more patrician simply by the fact that you can't even find it without going to industry/specialty (or ethnic if you want low quality) stores, despite it being a standard among professionals.
