Kosher salt is used in pickle making, meat curing and sausage making almost exclusively due to the fact of it's relative purity. Sea salts usually have a lot of other minerals that could have a detrimental effect on the flavor or the curing activity itself. Iodine, in most table salt, will impart a bad flavor.

Depending on what the recipe is for, it ca be a requirement. In recipes that can be substituted with sea or table salt, don't forget, they will have a differet volume than the kosher specified in the recipe. 1 tsp kosher <>1 tsp sea <> 1 tsp table.
