I've been to each once. Katz is a cafeteria. Carnegie has the old time Broadway atmosphere. Definitely worth a visit to Carnegie before they close. Get a sandwich, drink a Cel-Ray, bring home half for the next day. Enjoy the memes.

The sandwiches and platters? Yeah. For ~$20 in NYC you could do a lot worse and if you're a fag or a woman you can split one with someone.
The rest of the menu? Nah. Fuck paying $7 for fries.

I heard an NPR interview with the owner or manager of a NY deli (can't remember details, but it was a very old, well known one, but not one of the biggies like Katz's). One thing he said is that their corned beef sandwich ($19 on OP's menu) was a near break-even item for them. He acknowledged it was a crazy price for a sandwich (I think theirs might have been $21 or so), but said the cost of the meat accounted for most of that cost. He felt like you gotta offer it on the menu, or it wouldn't seem right as a deli, but you couldn't do a normal markup, because $30 would just piss people off on principle. So he just depended on people ordering higher-margin sides and drinks and enough profitable sandwiches to make up for it.
I guess really good corned beef is just very time consuming and labor intensive, and there are a limited number of suppliers. They also have the option of using shittier corned beef, or less of it, but then that erodes the deli's reputation, "what, they can't even make a decent corned beef sandwich?" It was an interesting perspective.
