You could use it in a recipe or attempt to make a pie with it. You really don't need alot for a pie

i canned some not to long ago and last night had a can mashed half and half with potatoes

500gr pumpkin
350gr cooked chick peas
250gr tomatoes
1 green bell pepper
1 onion
4 cloves of garlic
2 bay leaves
1 tsp paprika
1 tsp ground cumin
100ml evoo
Salt to taste

Preparation

Cook chickpeas or open can. For 350gr. cooked chick peas use 175gr dried chick peas.
Cook pumpkin in water for 15 minutes until soft.
Dice onion and bell pepper and sweat in evoo. Add garlic and cook for a bit more. Add cumin and paprika and bay leaves and cook for 1 minute. Add diced tomatoes and cooked until they break up. Add pumpkin and cook until it starts to break up, then add cooked chick peas and cook for 15 minutes more.
Serve with fried bread or toasted french bread. Sprinkle over some fresh parsley and more evoo or cumin or cayenne pepper or black pepper if you want.

soup!!!! I usually do it with hokkaido pumpkins but no reason it shouldn't work with other kinds of pumpkins. You just cut it into cubes, fry it for a bit on some onions, pour in water, cook it until soft, blend it, add cream, add salt, pepper and curry spice mix. Done.
Baked pumpkin is also great.
