You don't use cream in real carbonara. I did put the eggs in too early when the spaghetti was too hot, which made it less creamy than I wanted it to be.

Curious though. What sounds so bad about it. People mix cheddar with cream cheese for jalapeno poppers all the time and it works wonderfully. Mixing it with blue cheese and putting it on a burger, essentially also bar food, isn't too far of a stretch.
