At first i bunched it all up at the bottom of the bag then started pulling air out and kept the kief rolled slightly at the end (like in the shape of a burrito until the vacuum started pulling the bag tighter then eventually pulled it almost completely flat while I pressed on the keif

I cut it open 2 months later and it was like a slab of rosin, not moist at all but prefect for dabbing.

Probably it was overshadowed by the sauce. Next time you make pasta with a less robust sauce (like just a simple olive oil one), try the broth again. I find that just dumping a small can of store-bought broth into the pasta water helps the flavor.

i made baked crispy chicken wings last night. unbelievable.

wash/dry chicken
flour + SP + paprika + garlic salt + cayenne
400 for 45 minutes
flip chicken
450 for 20 minutes
broil till DONE

one of the best crispy/juicy ratios i've ever achieved with baking. you could mix these with double fried wings, and you could not tell which is which.

Missed a picture, but I added extra firm tofu and chili paste, let the tofu brown. I ran out of cooking oil, so I kept it from burning with my sauce: a mixture of soy sauce, sherry, honey, and corn starch.

If you've never tried tofu I'd definitely encourage you to do so. It's great when it's used on its own merits for texture and absorption of flavor rather than as a meat substitute. You can try a straightforward stir fry like I posted. I like tofu to be as firm as possible for stir fry; the kind I get is labeled as "extra firm" or "sprouted'. I have no clue what that means, but it's sold in vacuum sealed packaging instead of the standard water-filled tofu packaging.

If you like heat, and can find doubanjiang (gochujang works too), aka. spicy fermented bean paste, Mapo Tofu is fantastic. It's best with a medium-firm tofu, which absorbs the sauce more readily, and you can poach the tofu in boiling water to keep it from breaking apart when you stir fry it.

If you're more in the mood for a soup, Korean soft tofu stew is fucking delicious and easy to make. You can make it with any meat you like, beef, pork, seafood, whatever. For that you want to get the softest tofu you can find so it breaks apart and almost becomes part of the broth as you cook it.

Sorry if I got a little too enthusiastic here. Get some tofu and cook it, man.

Oh, I forgot, you can also lightly coat it in corn starch and deep fry it and serve it in a savory broth (dashi, fish stock made by boiling fermented skipjack tuna and kelp) agedashi style.

Or if the broth mentioned above is too much of a hastle, you can cut it into small cubes and deep fry it with the same seasonings as fried chicken, and it turns out fucking fantastic.

Or you can just marinate it overnight in soy sauce and sesame oil and serve it cold with a garnish of sesame seeds and scallions

God damn I love tofu.

I will second the recommendation for mapo tofu, although you have to go get fermented bean and chili pastes from your local Asian market to make it, and honestly it's best when you add pork IMO. Still the best tofu dish I've had.

Tofu is kind of like if you made gnocchi out of soft sawdust, in my experience. It can be delicious, but there is nearly always something better than tofu for any inclusion in any recipe.
