Decided to have hot pot on a whim and went out and bought a ton of ingredients:
-sliced beef, pork, and fish balls
-enokitake and shiitake mushrooms
-bean sprouts and chinese cabbage
-tofu, rice cakes, and tofu sheets
I haven't decided what kind of broth and dip to make, though. I have a divided hot pot and I was thinking one mildly spicy broth, and one clear. As for dip, I normally use sesame paste mixed with soy sauce and scallions, but I'm out of sesame paste. Any ideas or recipes?

For the spicy broth, I was thinking of either a kelp+anchovy base with gochujang and red pepper flakes, or stir frying some sichuan peppercorns, ginger, then adding pic related with chicken stock.

But seriously, what do you mean by this?
i'm chinese and i find hotpot to mostly be a gross and unpleasant hassle
nothing i hate more than having to sit around with a mixture of friends, relatives and total strangers while trying to fish bland meat and veg out of an increasingly greasy broth and having to negotiate around other people doing the same thing
