I don't like them. The breast meat is okay, but you gotta cook it almost like beef. The legs are essentially worthless. If you can get away with grabbing one, go for it and try it out. Thats what I did.

If it's your first one gutting, defeathering and butchering, you will ruin your thanksgiving. It isn't as easy as pilgrim cartoons but after one or two it's not an issue. Shoot a practice one or two first.
wild Turks are lean as all hell, best bet isto take three, bone out the breasts without feathering or gutting and make a roulade out of them with a shitload of herbs and butter, that would be a nice family roast.

That's pretty close to what I do when I hunt turkeys. I don't even bother with the feathers, I just yank off the skin feathers and all. I cut out the breasts and brine them. Meanwhile I make stock with the rest of the carcass.
The next day I take the breast meat out of the brine, season it with salt, pepper, fresh sage & thyme, then wrap it in caul fat (aka crepin) then roast that in the oven. Meanwhile I reduce the stock and make a sauce with some white wine.

Did this before and only take 2 hours or so. Boil water, put bird in water, remove the feathers then open it cutting from the ass to avoid poking the intestines/stomach inside the meat, after that just cut through the joints and put in the pan. Did you butchered chicken wings from the supermarket before? Then don't worry, you are ready to try from scratch.
