Edible bird's nests are bird nests created by swiftlets using solidified saliva, which are harvested for human consumption. They are particularly prized in Chinese culture due to their rarity, and supposedly high nutritional value and exquisite flavor. It is among the most expensive animal products consumed by humans, with an average nest retailing for about US$2,500 per kilogramme in Asia.

I remember watching the Travel Channel when I was little and on one show they showed how they harvest the nests for this soup along with the shit for a bat guano soup. I've wanted to try the birds nest soup (not so much the bat shit one) ever since then because of how it looks.
isn't it fake 90% of the time? no one can tell the difference because it tastes of nothing.
I watched a video of Vietnamese people harvesting this nest in their "farms" and they were throwing the mother bird's babies down the cliff for the nest. The mother bird is later shown confused and crying after seeing her babies' corpses.

There is a very subtle, but distinct sulfurous aroma that is kind of eggy. I like it but it may be an aquired taste. Also, the texture is very hard to duplicate. I haven't tried any fakes that have been able to match the texture.
