Everytime I try to make it it comes out dry and bland. Ive used a whole bag (16oz) of shredded sharp cheddar and usually added something like pepper jack as well.Should I be using heavy creme instead of milk for my sauce?

Every time I make Mac n Cheese from scratch it gets all lumpy and the milk seems to curdle or some shit. I can't seem to get it smooth and saucy like the boxed shit. What am I doing wrong? I'm not wholly fond of the baked kind of mac n cheese either. I'm a sauce guy.
