They don't taste as nice as normal potatoes and aren't as versatile. They're also quite possibly more expensive, I've never checked but bulk potatoes are stupidly cheap.
Canned potatoes last longer and stores better.

For a lot of trade-offs. And while canned potatoes obviously last longer storing fresh potatoes for a few months isn't difficult if you aren't a complete retard. You might only get one month if you get them from a shit source though.
The only real reason to use them is if you're really pinched for time. As has already been said, potatoes are cheap, and they keep for quite a while.

On outward bound we had a lot of canned potato salad.
I've never seen it since. It was pretty good but I was starving most of the time so probably not the best conditions for assessment.

It's waste of resources to can potatoes, since they last well enough when stored properly anyway and are most probably easily obtainable fresh even when things get a bit unusual so I don't see the point for prepping either.

Too watery. Taste nothing like a real potato. Weird texture. I hate this shit.
