I am attempting my first low and slow today, with beef cheeks.
It's my first time using a thermometer, and the digital one I bought is pretty shit. It's reading a temp of 151C, and I want 110-120. What's a good way to bring temps down on my weber kettle? Will it matter much if they were a little too high for the first hour?

I have the vents mostly closed. The temp seems to be coming down slowly, now at 148. When should I open them back up again? At about 120?

Just an update, i removed some coal and am now holding a steady 118C.
I might make a thread about this when I'm done, however I don't think the outcome will be very good.
