I was gifted pic related yesterday. What are some good dishes to break this in with? Are soups only okay to do if they're completely non-acidic and have low water content? I'm not new to cast iron as I have a well seasoned skillet, so I know how to maintain it. I just want to get the seasoning started with something besides 4 pounds of bacon at once.

You can deep fry stuff in them and it works better than most things as the thick iron holds heat so when you add food which is cold the temp of the oil doesn't change as drastically leading to more crunchy and less oily food.
It will also help season your pan easily.

Is there any place that is selling cast iron skillets that are NOT "pre-seasoned?" I'm not sure about their chemical "vegetable product" pre-seasoning so I want to do it on my own.
I'm having trouble finding any raw iron skillets.
